What is dried beef?

Dried Beef is a slowly cured, lean beef which is trimmed of most fat to attain ultimate leanness. It’s mildly salty, yet beefy and smoky flavor profile has leant itself well to many recipe applications over the last 100 plus years…but undoubtedly, the best recipe marriage with dried beef is just a little milk, flour and butter to create the classic “Creamed Chipped Beef” recipe.

What’s the best way to prepare dried beef?

Dried beef is an extremely versatile product. It can be served for breakfast, lunch and dinner…but the most popular way to prepare dried beef is in the Creamed Chipped Beef recipe.

  1. Brown the flour in the butter.
  2. Dissolve the milk in the beef stock, and then add that to the pot.
  3. Stir this together slowly to prevent lumping, and then add the beef.
  4. Cook for a few minutes, add the parsley, and serve over toast.

Are your products gluten free?

Yes, all of the products we produce are gluten free including our prepared Creamed Chipped Beef.

Do your products contain MSG?

None of the products we produce contain MSG.

What is the sodium content in Knauss dried beef?

The sodium content in our dried beef products is 660mg per serving or 27% of the USDA recommended daily value. The sodium level in our dried beef products is actually much lower than many prepared or convenient packaged ready to eat meals. Our dried beef products also have a high level of protein which can help keep you satisfied.

How long can dried beef be kept under refrigeration? Can you freeze dried beef?

Our Knauss Dried Beef should always be kept under refrigeration and be consumed before the “sell by” date which is stamped on the package. It is not recommended to freeze our dried beef as freezing compromises the quality of the product.

Roman Summer Fruit Salad with Dried Beef

A light and flavorful salad! Use fresh figs, melon, cantaloupe and combine with our Knauss dried beef for a delicious combination.

  • (1) 3oz. pkg of Knauss Dried Beef
  • (1) cup Fresh Figs, cut in quarters
  • 1 ½ cups Honeydew Melon, 1 inch dice
  • 1 ½ cups Cantaloupe, 1 inch dice
  • ¼ cup Red Onion, thin slices
  • 1 ½ tbsp.. fresh basil, chopped
  • 1 tbsp. balsamic vinegar
  • ¼ tsp. fresh ground black pepper
  • 4 cups spring mix lettuce



Separate the Dried Beef slices and place in a large bowl with the figs, honeydew, cantaloupe, and red onions. Add the basil, vinegar and, black pepper.  Toss gently.  Cover and refrigerate for 1 hour before serving. Arrange the lettuces on a large serving plate or individual plates, and top with the salad.  Serve immediately.

Creamed Chipped Beef

A traditional century old recipe enjoyed across the country. Use our Knauss Dried Beef in this recipe to make a delicious topping for toast, biscuits, baked potatoes, home fries, noodles, pizza, rice and more.





  • Knauss Dried Beef
  • 4   Tbsp. Butter
  • 4   Tbsp. Flour
  • 2½ cups Milk


Shred dried beef and brown lightly with butter in skillet.  Mix in flour, and then stir in milk.  Cook until thickened over low/medium heat. Option #1:  Add 1 Tbsp. Worcestershire sauce for a hearty flavor. Option #2:  Add 1/2 cup sour cream for a rich flavor. Option #3:  Add 1/4 tsp. chili pepper and 1/4 tsp. cumin for a Southwestern flavor. Serve over toast, biscuits, baked potatoes, home fries, noodles, pizza, or rice.

Quiche Lorraine A La Dried Beef

A classic French egg dish with a different twist.  Add our Knauss Dried Beef and surprise your guests with a delicious and unique breakfast pie.

  • 1   pkg. (4 oz.) Knauss, Dried Beef
  • 1   9″ Pie Crust
  • 1½ cups Cheddar or Longhorn Cheese, grated
  • 4   Eggs
  • 2   cups Milk
  • Dash of Cayenne or Chili Powder
  • Dash of Nutmeg
  • Dash of Mustard Powder
  • Dash of Pepper
  • Parsley, Butter & Paprika


Preheat oven to 375ºF.  Cut dried beef into small pieces and place in bottom of chilled pie crust.Next, place grated cheese on top of Dried Beef.  Beat eggs, milk and dash of cayenne/chili powder, nutmeg, mustard power and pepper together.  Pour in pie crust.  Sprinkle top with parsley, dots of butter, paprika and small pieces of Dried Beef.  Bake for 40 minutes and let cool 15-20 minutes before serving.
